With over 27 years of comprehensive experience in culinary arts and food service, Chef Roy Satheesan is a committed professional renowned for his proficiency in menu planning and execution, continuous innovation in line with modern trends, and expert training and supervision. His career journey began with Hotel Management studies at IHMCT, Kovalam in 1996. He gained invaluable experience at the iconic Oberoi Centre of Learning & Development before serving as Kitchen Executive at Hotel Oberoi Towers, Mumbai. His accomplishments include managing diverse outlets and playing a key role in projects at Oberoi Airport Services, Mumbai.
In 2001, Chef Roy embraced the cruise industry with Royal Caribbean Cruise Lines, overseeing a 360-cover buffet restaurant. His leadership extended to Carnival Cruise Lines in 2002, where he managed galley operations on ships accommodating thousands of guests and crew members. In 2007, he assumed the role of Chef de Cuisine (Executive Chef), directing a team of 150 personnel and overseeing the preparation of 25,000 daily meals.
Returning to India in 2010, Chef Roy joined ITC Hotels at Sheraton Park Hotel & Towers as the operational head, overseeing multiple outlets and banqueting for up to 3000 guests. He then became the Executive Chef Designate for the preopening of ITC Vilasa, a premium luxury resort by the Bay of Bengal.
Chef Roy's journey led him to his hometown, Thiruvananthapuram, where he took charge of the kitchen brigade at The Leela Kovalam, a picturesque beachside resort featuring five food and beverage outlets and extensive banqueting.
In 2018, Chef Roy ventured into entrepreneurship, opening a successful franchised outlet of Bikash Babu Sweets, specializing in Bengali Sweets, North Indian Sweets, Snacks, Chaats, and Short Eats. This endeavor expanded with the opening of a second outlet in 2019.
In 2022, Chef Roy, along with partners, introduced La Forno Cafe, a premium European Bakery and Cafe, well-received by Thiruvananthapuram residents for its high-quality offerings.
